Boilin recipe

Ingredients

4 green bananas (peeled, whole)
4 eddoes (peeled, whole)
2 sweet pottoes, cut
1 christophene, sliced
1 yam, chopped
1/2 lb flour
1 bundle scallion, finely chopped
1 medium onion, chopped
1 scotch bonnet pepper, whole
5 lb bag chicken quarters or Jack fish
1 lb block salted cooking butter
1 bullion chicken cube
1 tsp blackpepper
salt to flavor

To Season Chicken
2 tsp salt
1/2 cup lemon juice
1/2 cup vinegar
scallions

Instructions

In a large pot, bring 6 cups of water to a boil. Place all vegetable & provisions in pot.Add the butter and cubes. The bananas are placed in the pot after the other provisions to prevent mashing. Boil on medium fire for 10 to 15 minutes, or until provisions are medium soft and not mashed

Dumplings Preparation
Note: This mix must be pre-prepared before the cooking process begins

Mix flour and water together to make a smooth pasty dough, kneed the dough until it is of a soft smooth consistency, the dough should not stick to your hands
Pinch off golf ball size pieces of dough and flatten. Place these in the pot alongside the provisions.

Fish Preparation
Remove the scales and clean the fish using warm water, vinegar lemon juice and 1 tbsp salt. Wash again then add 1 tsp black pepper.

Add the seasoned chicken or fish, cover the pot tightly and allow all food to cook for another 20 to 25 minutes.
Test the provisions with a fork for softness, to make sure they are cooked through. The provisions should not mash but remain solid.

Make sure you always have enough water covering the provisions, therefore, add water as it evaporates.
Serves 4 Adults.
