Caribe Fried Shrimp recipe


Ingredients:


* 1 lb. jumbo shrimp, shelled and deveined
* 1 egg
* 2 Tbsp. cold water
* 1 tsp. freshly squeezed lime juice
* hot peppers to taste
* 2/3 cups Yellow Corn Meal
* salt to taste
* 1 tsp. curry powder
* ½ tsp. garlic powder
* ¼ tsp. paprika
* vegetable oil for deep-frying

Method:
In a small bowl, beat the egg with the water, add the lime juice and crush in the hot peppers. In a shallow dish, combine the cornmeal, salt and seasonings.
Dip the shrimps into the egg mixture and roll in the corn meal until completely coated. Pour the oil into a deep-fat fryer or deep pot and heat. Fry the shrimps until golden brown. Drain on a wire rack and serve.
