Mango Salsa
Ingredients:
* 1 cup diced ripe mango
* 2 Tbsp. minced scallions
* 1 Tbsp. freshly squeezed lime juice
* 1 Tbsp. chopped fresh parsley
* 2 Tbsp. chopped green or red pepper
* Crushed hot peppers to taste
Method:
Combine the ingredients in a small bowl and mix thoroughly.
Cover; chill for 2-hours and serve.
