Quick Orange Bread
Because of our British heritage, Jamaicans still enjoy afternoon tea. Usually we will serve toast with guava jelly and a piece of this type of sweet, cake-like bread. By the way, a cup of coffee is equally acceptable at teatime!
Makes: 10 to 12 servings
Ingredients:
* 2 cups all-purpose flour
* 4 teaspoons baking powder
* 1 cup sugar
* 1 teaspoon salt
* 2 eggs
* 1 cup orange juice
* 3 tablespoons melted shortening or vegetable oil
* 1 cup chopped candied orange peel
* 1 teaspoon grated orange zest
Method:
Preheat the oven to 350�F.
Grease a 9-inch by 5-inch loaf pan. Sift together the flour, baking powder, sugar, and salt. Beat the eggs well and add the orange juice, shortening, orange peel, and orange zest. Combine the egg mixture with the dry ingredients, mixing only enough to dampen all the flour.
Pour into the loaf pan and bake for 1 hour, or until a cake tester inserted in the center comes out clean. Cool in the pan for approximately 10 minutes on a wire rack, and then remove from pan. Continue to cool on a wire rack.
